Who doesn’t love muffins? They are great any time of the day…from breakfast to an after school snack. There are so many flavors and varieties…banana nut, blueberry, cranberry orange, lemon poppyseed…just to name a few.
Here is a muffin recipe that my family loves. It is so yummy that it could be mistaken for a dessert!
Peanut Butter Chocolate Chip Muffins
Ingredients…
2 cups flour
1 T baking powder
1 1/2 tsp salt
1 1/4 cups creamy peanut butter
1 1/2 cups mini chocolate chips
1 cup milk
2/3 cup sugar
1/3 cup canola oil
2 eggs
1 tsp vanilla
First, you stir the flour, salt, and baking powder in a large bowl.
Add the milk, eggs, sugar, vanilla, oil, and peanut butter. Mix thoroughly until moistened.
Add the chocolate chips and mix together.
Fill the muffin liners 3/4 full with the batter.
Bake at 375 degrees for 15-20 minutes, or until done. Recipe makes 1 1/2 dozen muffins.
