I’m not sure of the weather elsewhere in the country last week, but it was pretty warm here! I think we skipped over spring and went straight to summer temperatures. My youngest daughter thought it was time for the pool to open, and cool treats were on everyone’s mind. I decided it was time to make one of our favorite summer desserts…the ice cream sandwich cake!
This is SO simple to make! You need…24 ice cream sandwiches, one gallon of ice cream (I use vanilla, but any flavor will work), chocolate sauce, caramel sauce, and any toppings (I used mini M&Ms this time, but in the past I have used Oreos, peanut butter cups, Heath bars–all crushed, of course).
Using a 9×13 dish, place a layer of ice cream sandwiches in the bottom. You may need to cut the final one to make it fit in the dish.
Then add a second layer of ice cream sandwiches. This time place them going the opposite direction from the first layer.
Once both layers are in place, spread the ice cream on top. It helps if the ice cream is a little melted.
Once the ice cream is spread, drizzle chocolate sauce over the top. Follow that with the caramel sauce.
The best part…top it with the mini M&Ms!
Place the dish in the freezer until you are ready to serve. I had no problem finding someone to serve…my oldest daughter had a group of classmates at our house over the weekend studying for their upcoming AP tests. This treat made for a welcome study break!
As evidenced by the bowls left in my sink, I think they liked it!
Such an easy treat to make for any summertime gathering! I think the hardest part is unwrapping the ice cream sandwiches!!
