One of my favorite flavor combinations in the summer is lemon and blueberry…so yummy! Because we have a little more time in the mornings now (no rushing out the door to school), I like to bake this for my girls for breakfast.
Lemon Blueberry Breakfast Bread
You will need…
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 stick unsalted butter, room temperature
1 cup sugar
2 cups blueberries
2 eggs
2-3 teaspoons lemon zest
1/2 cup plain yogurt
Here’s what you do…
Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
Whisk together the flour, baking powder, and salt. Add the blueberries and lemon zest, and stir to combine.
Cream together the butter and sugar. Add the eggs one at a time, and beat well. Add the yogurt, and stir.
Add this mixture to the dry ingredients, and stir it together. Be sure not to crush the blueberries.
Pour batter into the loaf pan, and bake for 60-70 minutes or until golden brown.
It smells so good while it is baking! We have a hard time waiting for it to cool before we slice into it.
Did I mention that we eat this for breakfast…well, it is so delicious that it becomes a snack again later in the day!
