It’s apple picking season here in Ohio. Our family visited the apple orchard last weekend…always a fun time for my girls and their friends!
The apples are great for snacking and sending in their lunch bags, but the apple baking is the best! My favorite apple recipe is…
Apple Butterscotch Cake
Ingredients…
- 1 cup vegetable oil
- 2 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 4 cups diced apples
- 6 ounces butterscotch chips
Directions…
Beat the oil, eggs, sugar, and vanilla until blended.
Sift together the dry ingredients and combine with the oil mixture.
Stir in the apples and combine throughly. I sometimes add a little water to the mixture, as it becomes thick when stirring.
Pout the batter in a greased 9 x 13 dish.
Now for the best part (in my opinion)…sprinkle the top of the cake with the butterscotch chips.
Bake at 350 degrees for 50-60 minutes.
My family couldn’t wait to sample…it is also one of their favorites! In fact, I was out with friends and my oldest daughter texted me to ask if they could eat it…no waiting for mom!
Such a great combination of flavors…fresh picked apples AND butterscotch. Just add some whipped cream and enjoy!

It’s apple picking season back in England too! The flavour combination here of the apples and butterscotch is so tempting and perfect for the autumn! I baked some spiced apple cupcakes today with apples from the garden yesterday too! 🙂
