I had the pleasure of hosting the first team dinner of the season for my daughter’s softball team last week! I still can’t believe she is a senior, and this will be her last year of playing the sport. Team dinners are always a fun time for socializing and team bonding.
I think by now most of you know I enjoy creating a fun dessert area whenever I entertain. While this was not as elaborate as the dessert table I shared last week (click here to see that), I did try to make it somewhat festive for these high school girls.
My friend, who is known in our community for her marble cookies, baked a few batches of those…her daughter is on the JV team, and she was one of the co-hosts of the team dinner. Always quite popular are the green bear gummy bears that I order by the pound! The “green bear” is our school mascot, and those gummy bears have the best flavor…some of the softball players find them to be addictive!
To add to the marble cookies and gummy bears, I made some ICEE cupcakes.
The cupcakes are from a yellow cake mix. I baked the mini size because they are just easier to grab and eat! One yellow cake mix will make about 4 dozen minis.
It’s the frosting that makes it an ICEE cupcake!
For that you will need…
- 1 cup butter (room temperature)
- 4 cups powdered sugar
- 1 teaspoon vanilla
- 2 small boxes cherry Jell-O mix
- 3 tablespoons maraschino cherry juice
Directions…
- Beat the butter in a large bowl until fluffy. Add the powdered sugar one cup at a time and mix well. Add the vanilla.
2. Add the cherry Jell-O and maraschino cherry juice. Continue mixing until well blended.
Now before you frost the top of the cupcakes, it is best to attach the ICEE logo to the outside of the mini cupcake wrapper. I double lined the cupcakes so the logos would stick to the outside wrapper.

Print on regular copy paper, cut apart, and attach with double stick tape.
Now it is time to pipe the frosting on top of each cupcake!
An ICEE wouldn’t be an ICEE without one of those red straws! I cut off the tops of the straws and added them to the cupcakes.
The straws aren’t necessary, but I think they are so adorable and the perfect accent for an ICEE cupcake!
And they taste just like a cherry ICEE…the texture of the Jell-O makes it kind of gritty, just like an ICEE!
By the end of the night, there wasn’t much left of the desserts…I would say we hit a homerun!
