School mornings at our house can be kind of rushed, leaving little time for breakfast. Sound familiar? As a mom, I want to send them off with a healthy meal that will keep away the hunger grumbles until lunchtime. And this time of year, a warm breakfast is a bonus on these chilly mornings!
This recipe for blueberry chia oatmeal is simple enough to make on a school morning, and it will keep everyone energized until lunchtime.
And did I mention how delicious it is…blueberries, honey, and almond milk. Oh, don’t forget the praline pecans on top…just some added crunch and sweetness.
All the ingredients go in the pot to cook and simmer for ten minutes or so. Toss a few more blueberries and those praline pecans on top, and you are ready to serve a delicious and healthy breakfast!
- 2 cups rolled oats
- 3 tbsp chia seeds
- 2 tsp vanilla
- 1 cup blueberries (plus extra for topping)
- pinch sea salt
- 2 tbsp honey
- 4 cups almond milk
- 1 tbsp fresh lemon juice
- praline pecans

Place all the ingredients in a pot and bring to a boil over medium high heat.

Reduce heat to medium and let simmer for about 10 minutes, stirring until most of the liquid has absorbed.

Top with praline pecans and fresh blueberries before serving.
