Happy first day of fall, y’all…I know I’m not from the south, but I like saying it anyway! Some people have rushed the season by enjoying those pumpkin recipes since early September, but I like to wait until it’s officially fall.
I knew it was time when my girls started asking for pumpkin muffins last week. Let me just say this is the easiest recipe that I’ve ever made.
Two ingredients…yes, I said TWO ingredients!
A box of yellow cake mix and a can of pumpkin.
Just combine the cake mix and pumpkin on medium speed.
Spray the muffin liners with cooking spray and scoop the pumpkin mixture into each.
Bake at 350 degrees for 20 minutes. Let cool and sprinkle with powdered sugar.
Didn’t I tell you it was easy…and they taste scrumptious, so moist and flavorful. Our family has a debate over whether they should be considered muffins or cupcakes. We decided if we call them muffins, we can eat them for breakfast!
