This is a recipe passed down from my grandmother, and I always associate it with the holidays…perhaps because she usually made it for Thanksgiving and Christmas.
It makes a great accompaniment with a turkey or ham dinner, or sometimes I save it for dessert. It is THAT delicious!
Lime Jello Salad
Ingredients…
- 3 oz. box lime jello
- 1 cup hot water
- 1 medium can crushed pineapple
- 8 oz. cool whip
- 8 oz. cream cheese
- 12 oz. marshmallows
Note…The original recipe calls for 1/2 pint whipping cream (whipped) in place of the cool whip. I didn’t have whipping cream in my fridge when I made it once, and I substituted the cool whip. I decided that I like the texture better with the cool whip, so I’ve made it that way ever since.
Also, you can add chopped nuts…but I don’t do that since my girls aren’t fans of the consistency of the jello with the nuts.
Directions…
In a pot, mix the jello with the hot water. Add the pineapple and juice, and bring to a boil.
Add the cream cheese and marshmallows, and stir until melted.
Cool until slightly thickened. Then add the cool whip (or whipped cream) and the nuts (if using them).
Mix well…you want a smooth consistency. Allow to cool a bit more before pouring the jello mixture into a serving bowl. Chill several hours or overnight before serving.
So simple and you can make it the night before…a great recipe for those busy holidays!
